Mexi-Chili Casserole
16 ounce bag of corn tortilla chips
2 cans chili
15 ounce can of enchilada sauce
3-4 cups grated cheddar cheese (I usually use less than this)
8 oz can tomato sauce
1 can chicken (optional - I don't usually include this)
Reserve 1/2 of the chips and 1/2 of the cheese.
Mix all other ingredients in a 9x13 pan. Bake at 350 degrees for 1/2 hour. Top with remaining cheese and bake until melted. (I am usually lazy and mix all the cheese in at the beginning.)
Serve with chips and sour cream if desired. (I eat this basically like a dip.)
Note: This is probably the easiest dinner recipe I have. Besides grating the cheese the rest of it is just opening cans. I like to eat it with Nacho Cheese Doritos - but do NOT use Nacho Cheese Chips on the bottom of the mixture - they will burn in the oven.

1 small can chopped green chili (optional)
1/4 c. minced onion
1/4 c. salsa (optional)
1 1/2 c. shredded cheese.

Tear up tortillas innto bite sixe pieces and mix with all ingredients EXCEPT CHEESE...only add hlaf of cheese to mix. Put in an 8 x 8 baking dish and top with remaining cheese. Cover and bake at 350 degrreds until cheese is melted and bubbly, about 30-45 minutes.

Ham 'N' Potato Bake
2 lbs red potatoes, peeled and cubed
1/2 c. green pepper
1 Tbsp canola oil
1/4 tsp each pepper and dried thyme
1 c. + 2 Tbsp shredded cheese
1 1/2 lbs ham cubes
1/4 c. fresh parsley
1 c. chopped onion
1/2 c. sweet red potatoes
1/3 c. all-purpose flour
2 cans fat-free evaporated milk
2 Tbsp dijon mustard
1 pkg frzn carrots, cooked and drained
Cook potatoes in water until tender; drain. In a large nonskillet, saute onion and peppers in oil until tender. Stir in flour, pepper, and thyme until blended. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; Stir in 1 c. cheese and mustard until cheese is melted. Fold in potatoes, ham, carrots, and parsley. Transfer to a 3 qt baking dish coated with nonstick cooking spray. Cover and bake @ 400 degrees for 20 minutes. Uncover; bake for 10 minutes longer. Sprinkle with remaining cheese.

Chicken Divine
4 chicken breasts, boiled and cubed
1 16-oz frzn brocolli, thawed
2 cans cream of chicken soup
1 c. mayo
1 Tbsp lemon juice
1 c. grated cheese
1 1/4 tsp. curry powder
1 1/4 c. milk
Place chicken cubes in a 9 x 13. Cover with one large pckg frzn broccoli. Combine remaining ingredients and pour over chicken and broccoli. Sprinkle with croutons.
Bake at 350 degrees for 30 minutes.

Corn Chip Casserole
I got this recipe from my mother-in-law; it's one of my husband's favorite meals.
Preheat oven to 350.
1lb. of lean ground beef
Fry this with small onion, diced, and 2 cloves of garlic.
Season with salt and pepper.
Add 15 oz. can of tomato sauce, and a cup of corn.
Heat through in the frying pan. Set aside.
Mix together 1 cup of cottage cheese, 1 cup of sour cream, 1~ 4 oz. can of diced green chilies, and a cup of sliced black olives. Set this aside.
Crush about 8 oz. of corn tortilla chips in the bottom of a 9x13" pan. Spread evenly. Top with the meat sauce, then the cheese mixture. Grate 1/2 lb. of Monterrey Jack cheese evenly over the top. Sprinkle a few olives over this.
Bake about 40 minutes until hot and bubbling.
Serves about 8 people

Ham (or Spam) and Potato Casserole
3-6 large potatoes OR 3 c. reconstituted potato slices
1 cup (or can of spam), chopped ham
2 small onions, chopped or dash of onion powder
Cheddar cheese, grated
Sauce:
3 Tbsp. butter
2 Tbsp. flour
1 cup beef bouillon, reconstituted (1 tsp. bouillon in 1 cup water)
1/2 cup sour cream ( I use light)
1 tsp Worcestershire sauce
3 drops Tabasco sauce
Cook Potatoes in boiling salted water for approx. 20 minutes until tender. Melt butter in saucepan; add flour, stirring constantly. Cook 3 minutes. Add bouillon, sour cream, Worcestershire sauce, and Toabasco sauce. Stir well. Cook until thick. Arrange potatoes, ham, and onion in casserole dish. Pour sauce over top. Sprinkle with Cheddar cheese. Bake at 350 for 30 minutes. Serves 6.
* I use 3 large potatoes because I like to have more sauce. And I use the Farmland cooked and cubed ham so it makes things quick and easy. I have never tried the Spam, but one of these days I will brave it. We have a couple cans for food storage because that stuff can last up to 60 years! I am sure it would taste just fine either way. But the ham is my favorite!

Tuna Noodle Casserole
- 1 can tuna, drained
- 1 can Cream of Mushroom
- 1 Tbsp lemon juice
- 4 Cups (uncooked) egg noodles
- 1 Cup grated cheddar cheese

BBQ Beans
This dish is great served with baked potatoes.
1 Tbsp brown sugar
1 ½ Tbsp water
1 ½ Tbsp catsup
1 Tbsp Worcestershire sauce
1 Tbsp vinegar
½ tsp dry mustard
½ Tbsp chili powder
Salt and pepper
½ onion, chopped
1-2 stalks celery, chopped
½ lb ground beef
1 lb can pork and beans
Put the first eight ingredients in a saucepan and bring to a boil. Turn off. Brown ground beef; add onion and celery. Add meat mixture and sauce to pork and beans in a casserole dish. Bake at 350° for 30 minutes.

Tostada Casserole
1 lb Ground beef
Chopped onion
8 oz Tomato sauce
1/4 cup Water
1 Teaspoon chili powder
1/2 of a 4 oz can Diced green chilies
1 cup Monterey Jack cheese, shredded
1 4 oz Package hard taco shells, coarsely broken
Brown ground beef and onion. Drain. Return to skillet and add tomato sauce, water, chili powder, and chilies. Mix together and heat through.
Place taco shells in the bottom of ungreased casserole dish. Pour meat mixture on top. Add cheese. Cover and bake at 350 for 20 minutes.

Chicken Rice Casserole
(This is a family favorite!)
3 boneless skinless chicken breast cooked and cut into pieces
1 cup sour cream
1 can of cream of chicken soup
1 cup cheddar cheese shredded
1 cup mayo
4 cups of cooked rice
Put cooked rice on bottom of 9x13 pan. Sprinkle chicken over rice. Then blend and cook the sour cream, soup, cheese and mayo in a sauce pan till cheese is melted. Pour sauce over chicken. Bake at 350 for 20 minutes.
Chicken Broccoli Casserole

2 cups of Mozzarella cheese
1 package of frozen broccoli - thawed
1/2 package of tater tots - thawed
1/2 tube of Ritz Crackers
1 cube butter, melted
Mix the first 5 ingredients together, and pour into a 9x13 pan. Sprinkle crushed crackers over the top and drizzle with butter. Bake at 350 for 30 minutes.
2 cans of Cream of Chicken soup
2 cups of Mozzarella cheese

Chicken Cordon Blue Casserole
2-3 chicken breasts, cooked and cubed
1 cup ham, cubed
1 cup cheese, shreaded
2 cans cream of chicken soup
3/4 cup sour cream
2/3 cup milk
1/4-1/2 tsp. garlic salt
1 cup rice, cooked
croutons
Cook rice and chicken. Heat soup, sour cream, milk and
garlic salt.
In a 9x13 baking dish, make layers with soup, meats, cheese
and rice ending with soup.
Bake at 350 degrees for 30-40 minutes
Top with croutons.

I like fast and simple meals, here are some different Chicken Casseroles:
1-2 cans cream of chicken soup
1-2 small cans of cooked chicken or cook and chop up your own chicken pieces
1/2 bag of frozen mixed veggies
Season to taste: salt, pepper, seasoning salt, etc.
Mix ingredients together.
Top with tator tots or stuffing.
Bake for 20 minutes at 350 degrees.

Chicken Casserole
I grew up on this and my husband loves it now too. It's easy, quick and yummy!
1 lb chicken tenders (cooked and cubed)
1 can Cream of Mushroom soup
1/2 cup milk
1/3 cup mayo (or a little less if you're not a huge mayo fan)
1-2 cups grated cheddar cheese (depends on how cheesy you like things)
3/4 bag wide egg noodles, cooked and drained
After chicken and noodles are cooked...
In large saucepan add CofM soup, milk and mayo. Stir. Add cheese and chicken. Add noodles. Stir everything together and put into 8X8 or 9X13 baking dish (one will just be more full than the other...they both cook it the same).
If you like a crunchy taste with it, sprinkle crushed up regular potato chips over the top 5 minutes before it's done.
Enjoy!
