Chicken Salad Spirals

I love this recipe I got it from my Sister in law and make it as an appetizer or a light lunch. Plus it can't hurt that it is SUPER easy. Hope you enjoy!

Chicken Salad Spirals
8 flour tortillas
1 Can Chopped Chicken
1 8 oz package of Cream Cheese
1 4 oz package of Ranch dressing
1/4 C. Chopped Olives
1/2 Small Red Onion
1 can 4.5 oz Chopped Green Chilies
2 Tbs Fresh Cilantro Chopped
1/2 tsp Black Pepper.

Mix ingredients and Chill for 2 hours.
Then Spoon evenly over tortillas.
Roll.
Cut into Bite size pieces.
Secure with toothpick if needed ...Also makes for easy pick up.

Creamy Mashed Potatoes

3lbs potatoes
6 Tbsp butter
1 c. whole milk or cream
Salt and Pepper to taste

Peel and cut potatoes. Boil until tender. Drain. Put potatoes back in pot for 2-3 minutes and cook over medium heat to remove more of the water. Place potatoes in a bowl and mash them. Add butter and milk. Serve.

Pineapple Filled Angel Food Cake

*I saw this recipe in the Sunday paper a few weeks ago and can't wait to try it out on Sunday!

1 can (20 oz) crushed pineapple, undrained
1 pkg (3.4 oz) Vanilla flavor instant pudding and pie filling
1 c. cool whip
1 round angel food cake, cut into 3 layers
seasoned berried

MIX pineapple and dry pudding mix in a medium bowl. Gently stir in whipped topping.

STACK cake layers on plate, spreading pudding mixture between layers and on top of cake.

REFRIGERATE 1 hour or until ready to serve. Garnish with seasonal berries.
