Easy Oreo Truffles

I made these for neighbor treats a few years ago. They are pretty easy although the rolling into balls and dipping them does take some time. They are very yummy! I like to use plain Oreo's and the mint flavored Wilton candy melts to coat.

I'm going to be lazy and just copy the link instead of typing out the recipe again.

Cinnamon Sugar Coated Pecans

I haven't tried it yet, but I assume you can use this recipe on plain almonds as well. these are very addicting, and a more expensive gift, but so yummy! I also think there is plenty of this mix you can add another 1/2 pound more of pecans and it would still go a long way.

1 pound bag pecan halves
1 egg white
1/2 cup white sugar
1/2 cup brown sugar
1/2 tsp. salt
1/2-3/4 tsp ground cinnamon
a dash or so of nutmeg

preheat oven to 350 degrees. Whisk or beat egg whites until frothy and add then add the pecans to the egg whites to coat. Mix remaining ingredients and pour over pecans and stir to coat. Spread nuts on cookie sheet lined with Foil to make a single layer. Bake for 20 minutes turning once. Cool and store in an airtight container. Can be frozen, or kept in refrigerator.

Hot Chocoalate Mix

I like to make this powdered mix for gifts. I put in cute little bags. Then once the holidays are over the family can make it when they want to. (Sometimes we get sugar over load.). It is also a great way to use some of the food storage items that might expire soon!

Hot Chocolate Mix
15 C. Instant Dry Milk -- (We use Mary's Moo Milk)
1 1/2 C. Sugar
1 C. Cocoa
1 1/2 Tsp Salt.

Mix well. Store in cool dry place.
Mix 1/2 C. Mix to 1 Cup Hot water. Or to liking.

Makes 40 one cup servings or 10 Quarts.

Carmel Popcorn!




BAKED CARAMEL CORN

6 qts. popped corn

1 c. butter
2 c. firmly packed brown sugar

1/2 c. light or dark corn syrup

1 tsp. salt1/2 tsp. baking soda
1 tsp. vanilla

6 oz. semi-sweet or milk chocolate chips (optional)

2 tablespoons household measure of unpopped popcorn makes approximately one quart of popped corn.
Coat the bottom and sides of a large roasting pan with a non-stick vegetable spray. Place popped corn in the roasting pan.
In a heavy pan slowly melt the butter; stir in brown sugar, corn syrup and salt. Bring the mixture to a boil, stirring constantly. Boil without stirring for 5 minutes. Remove from heat; stir in baking soda and vanilla. Gradually pour over the popped corn, mixing well. Bake the popcorn mixture at 250 degrees for 1 hour, stirring every 15 minutes. Remove the popcorn mixture from the oven; cool completely. Break apart and store in a tightly covered container.
For a special treat: melt the chocolate and pour over the baked caramel corn. Stir until evenly coated. Chill in the refrigerator and break into clusters. Makes about 6 quarts.

Candy Cane Cookies

  • 1 Cup soft shortening (may use 1/2 butter or margarine)
  • 1 Cup confectioner's sugar
  • 1 egg
  • 1 1/2 tsp almond extract
  • 1 tsp vanilla
  • 2 1/2 cups flour
  • 1 tsp salt
  • 1/2 tsp red food coloring
Mix shortening, sugar, eggs and flavorings. Mix flour and salt. Stir in. Divide dough in half. Mix 1/2 with red food coloring. Roll into long, thin rolls. Twist with white dough rolled the same way. Shape into candy canes. Put on ungreased cookie sheet. Bake 9 minutes in 375 degree oven.
