Baked Beans

  • 2 large cans Pork & Beans
  • 1 lb. Bacon, cut in pieces
  • 2 large green peppers, finely chopped
  • 1 Cup brown sugar
  • 1 Cup Catsup
  • 2 medium onions, finely chopped
  • 2 tsp Worcestershire sauce
Bake 3 hours at 350 degrees or 1 1/2 hours in microwave. The beans are better the longer they bake (until sauce is thick). Bake in 4-8 quart pan with lid on. Take lid off about last hour. Stir occasionally. I cook all day in the crock-pot and it turns out great!

Hearty Tomato Soup

I know this isn't really a side dish but I've been asked by several people for the recipe so here ya go. Enjoy!

Hearty Tomato Soup

2 Tbls. butter
6 oz. cream cheese, softened
1 clove garlic, chopped
1/2 tsp. dried basil leaves
1/2 tsp. paprika
2 c. milk
2 cans condensed tomato soup
2 cans (14 1/2 ounces each) crushed tomatoes

-Melt butter and cream cheese in a sauce pan.

Stir in garlic, basil, and paprika. Gradually stir in milk and soup.

Beat with a wire whisk until smooth. Stir in tomatoes and stir until hot.
I like to grate cheese on top before serving.

Corn Bread Dressing (a southern meal)

This is a Thanksgiving Day favorite! Way better than your usual "stuffing"...lol

**Corn Bread Dressing**

Quaker corn meal- make as directed for easy cornbread – only do flour ¾ cup & cornmeal 1 ¼ cup, no sugar, Yes salt and everything else. Cook, break up when cool.

Simmer ½ chopped onion with 2 sticks of butter on low heat.

Mix cornbread and onions. Add 2 tsp sage, salt, pepper, 2 cans c/chicken soup & 1 ½ can water. Mix together. It’s fairly runny…taste…see if needs more salt, pepper, etc. Place in 9x13 pan 350 for 1 hour.
